Found Them!

I found Grandma Gerri's recipe cards! We need to send her goodies next Christmas. Or  this summer.

Ladyfingers

3/4 cup Margarine
4 Tablespoons confectioners sugar
2 cups self-rising flour
3 Tablespoons cold water
2 teaspoons vanilla
1 cup nuts

Mix together. Grease pan. Bake at 250º-350º. Roll in confectioners sugar

Cheese Krispies (4-5 dozen)

2 sticks oleo
1 package (8 oz.) Cracker Barrel sharp cheese, grated
1/4 teaspoon salt
1/4 teaspoon red pepper
2 cups plain flour
2 cups Rice Krispies (not used by Gmom)

Mix well and fold in Rice Krispies. Pinch off a teaspoons worth at the time and mash with fork. Bake at 350º for 10 minutes.

Pecan Pound Cake (3 loaf pans)

5 cups of pecans (chopped)
1 pound margarine (Walmart) softened
3 cups sugar
4 cups plain flour; sifted
1/2 cup self-rising flour; sifted
eggs (8 medium/ 7 large) 3/4 cup, rest of 2 cups milk
1 Tablespoon vanilla

Cream together margarine and vanilla. Add ~1/3 of the flour. Add cup of eggs and milk and beat. Add another third of the flour. Add the last cup of eggs and milk. Add the final third of flour. Fold the nuts in. Grease and flour pan. Bake at 300º for approximately 90 minutes. When it pulls from the side of the pan, then it's done.

Pecan Pie

Recipe pastry
2 eggs beaten
1 cup dark Karo syrup
1/2 teaspoon salt
1 teaspoon vanilla
1 cup sugar
2 Tablespoons melted margarine
1 cup pecans (whole)

Roll pastry, line pan.
Mix eggs, syrup, salt, sugar, vanilla, butter, etc. together. Fold pecans in last.
Bake in 400º oven for 15 minutes. Reduce to 350º and bake 30-35 minutes longer.

  3. Notes: A half recipe of the lady fingers makes 15. But that's when I shaped them to be the size that I remember them. And then they rise. So try to make 18 next time. Also bake for a minute longer. No, I still didn't time to know how long that is.

    But I did time the cheese straws. They took about 20 minutes. Also, I used about half cayenne and half paprika. Next time return to the classic and go full cayenne.

  4. This year, I made full batches of both lady fingers and cheese straws. I baked the lady fingers at 320F for about 22 minutes, and the cheese straws at 350F for 16 minutes. I think the lady fingers should have baked slightly more, but the cheese straws were about ideal.

    Other note is that I used margarine for the lady fingers and butter for the cheese straws. Shrug.

  5. I'm starting to test gluten free versions of the ladyfingers. One half batch with regular rice flour, one half batch with Bob's Red Mill one-to-one blend (aka a rice flour blend). I left out the Rice Krispies. (If you need some, Aldi's store brand was marked gluten free.) Both versions baked for 25-26 minutes.

    They turned out crisp. And cheesy. So there's that success. They didn't hold the shapes as well as flour traditionally has--after baking the cookie press ring looked about the same as the six pointed flour. (Next time, maybe chill the dough between pressing and baking?)

    I liked the plain rice flour texture better, though I haven't figured out how to describe why. Like most research, more tests are needed. Millet flour? A blend with corn flour? Would teff work with cheese? Is quinoa too strong a flavor? Are nut flours a good idea or nah? Guess I'll have to sacrifice by eating more of these.

  6. For cheese straws in 2020, left out the rice krispies, mixed the cheese and butter together really well until it was soft, and used the cookie press. The cookie press worked for once! Baked at 350F for 17 minutes. Closest to matching my memory yet.

  7. This year, I used salted butter for the cheese straws (because it was on hand) and reduced the added salt to just a pinch. It worked fine.

    The one thing I ran into is that the cheese straws were temperamental in the cookie press. After succeeding with the press the past couple of years, this year I'd manage to press one or two and then the top would pop off and I'd have to fix it. Margo Tolbert makes her mom's cheese straw recipe and said that some years the cookie press works and some years they end up slicing them, which makes me feel better.
